Mango Elixir Cookies

Discover this easy recipe for Mango Elixir Cookies, a delightful summer treat made with Tea Tonic's Mango Elixir Tea. Perfect for tea lovers and baking enthusiasts!

What you’ll need:

  • 150 grams of unsalted butter
  • 4 teaspoons Mango Elixir Tea
  • ½ cup sugar
  • 1 egg
  • ½ cup coconut
  • 1 ½ cups self-raising flour

Steps:

  1. Preheat oven to 180 degrees
  2. Melt the butter and Mango Elixir Tea together over low heat. Allow this to cool but not set (about 5 to 10 minutes).
  3. Strain through a fine sieve and mix in the sugar
  4. Add the egg and beat until combined.
  5. Mix in the coconut and flour until combined.
  6. Roll out teaspoon amounts and put on a lined tray.
  7. Press down slightly with a floured fork.
  8. Bake in oven for 10 minutes or until lightly golden brown .
  9. Allow to cool slightly on tray before moving to a wire rack to cool completely.
  10. Dust with icing sugar and serve

*an alternative is to add ½ cup of white chocolate chips to the mix before rolling out.
